- Abbey of Regina Laudis - Bethlehem, Connecticut. "Community of contemplative Benedictine women..." Sister Noella Marcellino, known as the "cheese nun" was featured in a New Yorker article (Raw Faith: the Nun and the Cheese Underground by Burkhard Bilger, August 19 & 26, 2002, pp. 150-157); A master pursues the secrets of cheese by Mary Blume, January 23, 2004. "Regina Laudis is a remarkable Benedictine abbey of 40 nuns. It was founded in 1947 by Vera Duss, an American raised in France where she became a surgeon and later entered a convent, returning to the United States after World War II. It is a traditional cloistered community in that the nuns wear full habit, have a grille, sing Gregorian chants and say Divine Office seven times a day. But since most of them entered the abbey after the age of 25 and already had careers, they are professionals as well as contemplatives." There is also a documentary: The Cheese Nun: Sister Noella's Voyage of Discovery directed by Pat Thompson. Cheese is sold in the Shop (203-266-7637) which is open every day 10:00 - 12:00 and 1:30-4:00, and closed all day on Wednesday.
